Sassy Salsa

2 large, ripe tomatoes cut into large wedges
1 small vidalia onion
½ medium green pepper, cut into large slices
1 ½ tsp. minced garlic from jar
4 pickled jalapeno peppers, seeded, and 2 tsp of the juice from the jar
½ c. chopped fresh cilantro (I like to add more!!!)
½ c. V-8 juice (I often add the whole can depending on how I feel)
½ tsp. Salt
Pepper to taste

In a food processor, chop the onions until coarse. Then add tomatoes, green pepper, garlic, jalapeno pepper and pepper juice. Do not puree!

Add cilantro, V-8, salt & pepper and pulse until mixture is well blended and chunky.

Serve with chips!
